College Meal Prep: Peachy Spring Zesty Chicken Salad

 

Something light and easy. As most of you know, I’m pretty big on clean eating. This meal is one of my go to meals! The spice in the chicken really brings out the flavor and balances the taste of the sweet peach with this salad.

Servings: 8

Prep time: 30 min

Ingredients:

2 cups of spinach

1 head of lettuce

1 large peach

2 chicken breasts

1 tsp Tony’s seasoning

1tsp garlic powder

1 tsp basil

1 tsp cayenne pepper

optional: organic balsamic vinaigrette

Take the head of lettuce apart and toss it in a large bowl with your spinach. Dice or slice the peaches and mix them into the bowl. Start by seasoning your chicken in a ziplock bag, rub it in and let it sit for 5 min. Pan grill the chicken and slice it into thin slices. Layer the chicken on top and use balsamic vinaigrette to top it all off!

Sometimes I don’t even use vinaigrette because the peaches and chicken already add so much flavor. The zesty kick from the chicken and sweetness of the peach make the perfect pair! But this is honestly one of my favorite weekly meal preps I’ve created so far. It makes me super energized throughout the day if I have it for lunch and also makes me feel great after a long workout.
